Almond Cake Biscuits
Delicious almond flavored cookie that pairs well with tea. The pressed cookie is a dry, crumbly crisp bite with bits of almond and feels powdery on the palate since it contains no egg or leavening.

We used to buy almond cakes in a tin at an Asian food market in White Plains, but when it closed many years ago there was no place to buy them. (We don't go down into NYC.) Glad I found them online. Although they are not quite as thick as the cookies from my childhood, they are authentic in taste and texture. We jokingly call them "dry as dust cookies" but it is said with great fondness. Tasty with a good texture.
